On the next version (3.1.3), we will be adding a new option “Sort by date – descending”.
Meanwhile, you can use the “Sort by last modified date: newest to oldest” option.
After filling this option with some value, you can set this by default accessing:
WooCommerce > Settings > Products > Display > Default product sorting
