Hi Scott,
Very sorry for not getting back to you earlier, it seems we missed this post and just saw it when I got notified about the latest post here.
Most probably there is a conflict in settings that prevents showing gateways (i.e. mixed products, gateways included in some part but excluded in others).
I suggest you reset the settings tab by tab, then start setting up the plugin to see when the message appears (I mean after configuring what setting).
