PHP Fatal Error

We’ve just had to disable the “EU/UK VAT for Woocommerce” plugin (version 2.11.8) from within recovery mode as we were unable to login to our admin dashboard as there was a critical error preventing access.  Our error logs point at the following fatal error coming from the EU/UK VAT plugin:

Is this a known issue with the current release and is there a way to fix this error?  In case it’s relevant, our WordPress version is 6.5.5.
