One more question, is it possible to hook a function to validate the input fields created?
E.g. the customer enters an email or phone number and I like to have a server side check to validate his input?

I was going to add a filter as requested, however, I’ve realized that we can already do that with WooCommerce
woocommerce_after_checkout_validationfilter. Please check the “Developers” tab on the plugin page – I’ve just added an example for input fields extra validation there.Let me know if you have any questions.
