That is not a Cost of Goods plugin-related issue. It is a WooCommerce issue, and you would have to troubleshoot that yourself. Most likely your web hosting resources are exhausted or a plugin / theme issue. Can you try and deactivate other plugins you have one by one and check if it solves your issue.
It seems it was a browser issue on my end. I cleared my browser cache and refreshed the report and all of the new columns are indeed showing up now. Thank you!
