Is there a way to see what my total inventory cost value was on a specific date?

Unfortunately, no, not for historical dates. You can check for the current date though. First you wll need to enable the option under:
Tools & Reports > Analytics > Stock tab.

I have the options enabled under ‘Tools & Reports’
but when I go to analytics>stock
I am not seeing current stock value…please tell me where specifically I should be seeing this.

In Tools & Reports > Analytics > Stock tab you can see the stock value for individual products.

can you show me a screenshot of where I can find this?
The only Tools & Reports section that I see is under WooCommerce>Settings>Cost of Goods Sold>Tools&Reports>Analytics…but there is no ‘Stock tab’ here.February 17, 2022 at 10:25 pm #89919PabloModeratorPlugin Support
Here you can find the “Analytics > Stock” settings from our plugin: Cost of goods > Tools & Reports > Analytics > Stock tab.
Here you can find the stock tab from “WooCommerce > Analytics”: Analytics > Stock.
