Can you please try the following
General > Guests > Block guests from buying products
General–>Block guests from buying products–>Block method: According to limit options
Limits–>Per Product: Enable
Product edit page–>Limit per user : 0
Product edit page–>Block guests: Checked
This way you can block specific products for guests.

Are you setting up the addons as a variable product? If so, then you can add the cost to each variation. So you can have a mattress only as a variation and a mattress + bed frame as another variation. In this scenario, you can easily add the cost to each variation.
Or are you using a plugin for product addons?

In your WordPress dashboard if you navigate to WooCommerce > Reports > Cost of Goods Sold you can get your profit report there.
Our plugin will only give you Cost of Goods sold and profit reports for a time period.
For stock reports you will have to get a different solution.
