There is a trigger or a possibility to create a trigger related ” every new product in a specific category added” ?

I am not sure if I was able to understand your question. If you want to send custom emails based on a specific product or category, then you can utilize the “Require product” or “Require product categories” options located in the “WooCommerce > Settings > Emails > Your custom email”. But please let me know if that’s not what you meant.
